So what does a chef eat over a vodka soda celebration drink? "Steak tartar," Ryan tells us - "I have to order it anytime I see it on the menu."
Once we got over the fear of the raw quail egg he expertly poured onto the raw steak and stirred into the horseradish, arugula Parmesan, & tuille blend, we had to admit it was fantastically delish. The pumpkin fritters while not as adventurous, were equally flavorful.
